1 kg of calf or calf neck
500 g pork neck
250 g lamb thigh
2-3 large beef bones
1 tablespoon salt
pepper (to taste)
1 large onion
1 medium carrot
1 head of garlic

According to retetesivedete.ro, Radu Anton Roman’s recipe for children is prepared as follows:
Chop the whole meat. Mix well with salt, pepper, soda, spices, hot pepper, finely chopped garlic (until they become a paste), minced thyme, until everything becomes dough.
The broken beef bones, along with all the vegetables, were cooked for about two hours, until half a liter of soup was chosen from two liters of water.
Squeeze the soup, cool it, then knead it well with the meat. Leave this mixture in the refrigerator for a few hours.
The little ones are rounded either in their hands, always watering so that it does not stick, or in the sausage maker’s pipe. Then mititei: it’s just good to put them on a hot grill.
